I say pardon??? That’s right, you heard correctly. These are beer nuts wrapped in a chewy vanilla batter with a sweet sweet caramel swirl. This is basically what would happen if a cookie collided into a handful of beer nuts and they had the most adorable cookie children.
Beer Nut Cookies
- 3/4 cup butter, room temperature
- 1 1/4 cup brown sugar
- 2 eggs
- 1 Tbsp vanilla
- 2 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup beer nuts
- 4 Tbsp prepared caramel sauce (purchased in jars or tins) or dulce de leche works great too!
Beat the butter and sugar until fluffy. Add the eggs one at a time beating to incorporate. Add the vanilla and mix through.
Tip in the flour, baking powder, baking soda and salt. Mix until just combined. Add the peanuts and mix until evenly distributed.
Drizzle in the caramel sauce and using a wooden spoon, swirl it through. Don’t completely incorporate it – you want to be able to see the swirls.
Place the entire bowl in the fridge and chill for about 30 minutes.
In the meantime, line a tray with parchment and preheat the oven to 375°F. Drop the dough by tablespoonfuls onto the prepared tray about 3 inches apart and bake for 9-10 minutes.
