Browned Butter Rice Crispy Square Pops!

Okay, so the name is a bit of a mouthful but seriously, the additional step of browning the butter makes a world of difference and elevates a boring rice crispy square into a bake sale worthy treat!

This is a fun treat to make with kiddies. Let them roll up their sleeves and get their little hands dirty in dipping and dunking the square pops!

Brown Butter Rice Crispy Square Pops

  • 1/2 cup butter
  • 1/4 tsp kosher salt
  • 250 g bag small marshmallows
  • 6 cups rice crispies
  • 1 bag chocolate chips for melting
  • 1 cup sprinkles
  • 16 popsicle sticks

Grease and line a 8 x 8 inch square pan with parchment.

In a medium pot over medium high, melt and brown the butter. Turn off the heat when the butter smells nutty and is an amber color. Stir in the salt and then add the marshmallows. Stir until they are completely melted.

Pour in the cereal and stir to coat. Press the batter into the prepared pan and using a spatula, press it evenly into the corners. Cool to room temperature.

Tip out the square and cut into 16 squares. Push a popsicle stick into each square.

Melt the chocolate over a double boiler. Dip each square into the chocolate and then coat in sprinkles. Lay on a parchment lined try to dry.
