Slathered with a generous heap of cream cheese frosting, this loaf is delish, completely unfussy and comes together in a pinch.
Carrot Cake Loaf
- 1 cup white sugar
- 1/2 cup vegetable oil
- 1 1/2 cups well packed grated carrots
- 2 eggs
- 1 cup flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp cinnamon
- Pinch salt
Preheat your oven to 350°F. Grease a loaf pan and set aside.
In a large bowl, stir the sugar, oil, carrots and eggs until well combined. Sift in the dry ingredients and mix through. Pour the batter into the prepared pan and bake for 45 minutes or until an inserted toothpick comes out clean. Allow the cake to cool in the pan for 15 minutes before turning out onto a wire rack.
Cream Cheese Frosting
- 4 oz. cream cheese
- 2 Tbsp butter
- Pinch salt
- 1 1/2 cups icing sugar
- Few drops vanilla
- Few drops lemon juice, optional
Beat the cream cheese and butter together. Add the rest of the ingredients and beat until fluffy. Spread the frosting over the cake.
