This is currently one of my favorite adult cookies! They have the richness of a good PB cookie and the bitterness from dark chocolate. Don’t forget to put top them with a good sprinkle of flaked sea salt for a nice crunch!
Dark Chocolate, Tahini and Sea Salt Cookies
- 2/3 cup butter, melted
- 1 1/4 cup brown sugar
- 1/3 cup white sugar
- 1 large egg
- 1 tbsp vanilla
- 2/3 cup tahini, make sure it is smooth and stirred through
- 1 1/2 cup AP Flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 225 g dark chocolate bar, chopped into pieces.
- Flaked sea salt and sesame seeds (toasted if possible) for sprinkling
Put the butter, sugars, egg and vanilla into a stand up mixer and mix until fluffy – you can also do this all by hand. Add the tahini and mix through. Mix in all the dry ingredients – I usually dispense with the sifting since I’m usually cooking with the kids and it just seems messy and it turns our just fine. Fold in the chocolate chips by hand.
Use a 2 tablespoon ice cream scoop to scoop out individual mounds onto a parchment lined baking tray, top liberally with sea salt and sesame and freeze them solid before transferring to a Tupperware to store in the freezer. I actually find that cookies bake up a bit nicer and crispier on the outside when baked from frozen.
Bake these cookies at 375ºF for about 10-12 minutes.
