These cookies come together in a pinch! No individual rolling or shaping, chilling or decorating. Just slap the dough into a pan, bake, slice and serve! They are good and the addition of the espresso makes them even tastier!
Don’t over bake these cookies and they will turn out soft and chewy with a blondie like crust…nom, nom, nom…
Triple Chocolate Cookie Triangles
- 1 cup butter, room temperature
- 1 2/3 cups sugar
- 2 eggs
- 1 Tbsp vanilla
- 1 shot espresso
- 3 1/3 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- 350 g mix of chocolate chips (I used a third of each dark, milk and white)
- Sea salt
Preheat the oven to 350°F. Grease and line a 30 cm x 40 cm jelly pan with parchment paper.
In a large bowl, beat the butter and sugar until fluffy. Add eggs one at a time blending until mixed in followed by the vanilla and espresso. Sift in the flour, baking powder and salt and mix until just uniform. Stir in the chocolate until distributed.
Press the prepared batter into the pan and sprinkle with sea salt. Bake for 22-27 minutes. Remove from oven and cool completely. Cut into 24 triangles.
