Chocolate and hazelnuts are a winning combination and these cookies are no exception.
My boys call these ‘adult’ cookies since they don’t resemble their all time favorite milk chocolate chip and Smarties variety (see cookies on the left). The ‘adults’ in the household are perfectly fine with this preference.
Double Chocolate ‘Nutella’ Cookies
- 3/4 cup butter, room temperature
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 tsp vanilla
- 4 tsp Frangelico
- 1 Tbsp honey
- 2 cups flour
- 1/3 cup coco powder
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 cups semi-sweet chocolate chips
- 1 1/4 cups roasted hazelnuts, chopped
In a stand up mixer, beat the butter and sugars until light. Add the eggs, vanilla, Frangelico and honey. Beat until combined.
In a separate bowl, sift the flour, cocoa, baking soda and powder and salt. Add the sifted ingredients into the butter mixture and cream through until almost uniform.
Add in the chocolate chips and hazelnuts and stir until mixed through. Chill the batter in the fridge for an hour or at this point, freeze the batter into logs for later use.
Preheat your oven to 375°F and line a baking tray with parchment paper.
Place walnut sized balls of dough onto the parchment leaving plenty of space between and bake for 8-9 minutes.
