Years ago, this was a go to recipe for me. I was a beginner baker and the results were always amazing.
The original recipe came from my good friend’s mom but it has evolved a bit over time. You can bake this in a bundt pan but I prefer a 9-inch pan so I get to enjoy the extra crunch!
Easy Cinnamon Coffee Cake
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 cup natural yogurt or sour cream
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups flour
- 1/2 cup sugar
- 2 tsp cinnamon
- 1/4 cup finely chopped walnuts or pecans
Grease and line the base of a 9-inch pan. Preheat your oven to 350°F.
In a small bowl mix the baking soda into the yogurt and allow to sit.
In another bowl, combine all the topping ingredients and set aside.
In a third bowl, sift the baking powder, salt and flour.
Beat the butter and sugar until light and fluffy. Add the eggs and vanilla and beat through.
Add half the dry ingredients followed by half the yogurt mixture. Mix through and repeat. Mix until the batter is uniform.
Spread half the batter on the base of the pan. Sprinkle half the topping and repeat with remaining batter and topping.
Bake for 45 minutes or until a toothpick comes out clean.
