We aim to please Mr. Grey.

Even absent the rough hide straps, steely metal buckles and stinging leather whips, this mysterious, icy cool, highly nuanced, decadently creamy and smooth ice cream absolutely aims to please.

Do I have your attention? Enough about Mr. Grey and more about the recipe. It is dead simple, does not require a fancy ice cream machine, is ultra versatile, eggless and naturally gluten-free! I believe we have a number of dietary categories covered.

This version features black sesame seeds which makes for a rich nutty flavored treat speckled in grey and black. If it’s not your thing, try scrapping in 2 vanilla beans and omit the sesame altogether. Or replace it with espresso powder, green tea powder or cinnamon!

Fifty Shades of Grey ‘Ice Cream’

  • 2 1/2 cups heavy cream
  • 1 tin of condensed milk
  • 1/2 cup sesame seeds
  • 1/2 tsp salt

In a large pan, toast the seeds over medium heat until fragrant. Place the seeds and salt in a small food processor and blitz until ground. Cool and reserve.

Chill the bowl and the whisk attachment of your standup mixer in the freezer for at least 25 minutes. Dump the cream and milk into the bowl and whip until soft peaks are formed.

Stir in the cooled seeds until combined. Pour the mixture into four 1/2 liter containers, seal and freeze overnight. Serve straight from the freezer.

Serve straight from the freezer. If the ice cream is too hard to scoop, allow it to soften for 40-60 minutes in the fridge.
