Just Oatmeal Cookies

There’s a little boy in my life who wants oatmeal cookies. Not oatmeal raisin or chocolate chip and none of that fancy cranberry white chocolate variety either. Just straight up good old fashioned oatmeal.

So what makes the perfect oatmeal cookie? For me, it’s all about texture and flavor, that means browned butter and the right kind of oats.

Just Oatmeal Cookies

  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 4 Tbsp butter
  • 1/2 tsp cinnamon
  • 3/4 cup dark brown sugar
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 egg yolk
  • 2 tsp vanilla
  • 3 cups minute oats

In a small bowl whisk the flour, salt, baking soda and cinnamon together.

Brown the butter in a small pot until foamy and very fragrant. Transfer the browned butter as well as any caramelized milk solids into a heat proof bowl to stop the cooking. Add the sugar and oil and mix until combined. Add the eggs and vanilla and continue to stir until uniform. Fold in the flour mixture and once almost all incorporated, add the oats and mix until all the oats are coated.

Preheat your oven to 350°F. Roll 2 Tbsp of dough into balls and press them onto the baking tray so that they are about an inch tall. Bake for 10-12 minutes until golden brown.
