Chatamari, a super thin and crispy Nepalese rice pancake. Topped with seasoned meat and a runny egg and you’ve got yourself a pizza-like dinner! This version is both gluten and dairy-free!


Momo Achar

  • 3 plum tomatoes
  • 3/4 tsp Sichuan peppercorns
  • 1 1/2 tsp whole cumin seeds
  • 3 Tbsp sesame seeds
  • 1 dried red chili
  • 2 cloves garlic, minced
  • 1 Tbsp ginger, grated
  • 1/2 cup cilantro chopped
  • 2 Tbsp red onion, chopped
  • 2 Tbsp lime juice
  • 1/2 tsp sugar or honey, to taste
  • 1/2 tsp salt

Broil the tomatoes whole for about 6 minutes. Flip and broil the other side until skins are blistered. Cool and set aside.


In a small pan, toast the peppercorns, cumin and sesame seeds until fragrant. Cool and blitz in a spice grinder to form a powder.

Remove the skins from the tomatoes. They should slip off easily after having been blistered and place them into a bowl. Add the ground seeds, garlic and chili and using a hand blender, crush the tomatoes to form a puree. Stir in the remaining ingredients. Adjust seasoning and set aside.


  • 1/2 lb ground beef or lamb
  • 1 Tbsp oil
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 Tbsp ginger, grated
  • 1/2 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp salt

Heat oil in a non-stick pan and add the onion, ginger and garlic. Add the spices but do not burn. Fry until fragrant and add the lamb. Once cooked through, stir in the salt. Remove from pan and keep warm. Wipe the pan clean and return to stove.


  • 1 1/4 cup water
  • 3/4 cup rice flour
  • 1/2 tsp salt
  • 4 eggs
  • Cilantro to serve

In a large bowl, mix together the rice flour and salt. Add the water and whisk through. The mixture will be very runny.

Heat the same non-stick pan to medium-high. Brush the surface with oil and add 1/3 cup of the chatamari batter. Quickly swirl the pan to coat with batter. The pancake will be crisp and the edges will curl up.


Crack an egg in the center of the pancake and spread 1/4 of the keema around the egg. Cook until the egg is just set but the yolk is runny. Season with salt and pepper.

Slide the pancake onto a warm plate, top with momo achar and more cilantro leaves.
