Summer showed up late this year but it’s finally here and it’s a scorcher! This salad is perfect with a glass of super chilled Pinot Grigio and when you cannot bear to fire up the oven.
Musk melons have been popping up at my farmer’s market but you can replace it with a ripe cantaloupe if that is easier to find.
Musk Melon and Parma Ham Salad
- 1 musk melon, skinned, seeded and cut into 16 slices
- 350 g Parma ham or prosciutto, 16 thin slices
- 2 cups arugula
- 4 Tbsp extra virgin olive oil
- 2 Tbsp Balsamic Vinegar
- 2 Tbsp runny honey
- Coarse salt and fresh pepper to taste
Sprinkle a bit of salt onto the melon and wrap each with ham.
Scatter half the arugula onto your serving plate and arrange the melon on top. Drizzle with oil, vinegar and honey and top with the remaining arugula. Give everything a good dose of salt and pepper.
