Oatmeal Caramelitas

I found this recipe in a cookbook published around the time I was born. I love a good vintage recipe and was immediately drawn to these sticky golden brown treats. Packed with caramel, chocolate and nuts, these squares are hard not to love.


Oatmeal Caramelitas

  • 1 cup butter
  • 1 cup brown sugar
  • 2 cups flour
  • 2 cups minute oats
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup caramel ice cream topping
  • 3 Tbsp flour
  • 1 cup chocolate chips
  • 1/2 cup chopped walnuts

Line and grease a 9 x 13 inch pan with parchment paper. Preheat you oven to 350ºF.

In a large bowl, mix the sugar, flour, oats, salt and baking powder until well combined. Add the butter and mix through until the mixture is crumbly.

Pat 3 cups of the oatmeal crumble into the bottom of the pan reserving the rest for the topping. Bake for 12 minutes.

Combine the caramel sauce with the 3 Tbsp flour and spread it over the pre-baked oatmeal base. Sprinkle the base with chocolate chips and the remaining oatmeal crumble. Bake for another 20-25 minutes or until the top is golden.

Cool completely before cutting into squares.
