The holiday season is full of great traditions. Here’s one of my faves.
These Spiced Molasses Crinkle Cookies + A Bottle of Chilled Champagne + A Tree to Decorate + Some Amazing Friends = A Great Tradition in my Household!
A batch of these cookies are a definite must – freshly baked too! These gems smell like a gingerbread house and always get me into a festive mood.
Spiced Molasses Crinkle Cookies
- 1 cup white sugar
- 2/3 cup vegetable oil
- 1/4 cup molasses
- 1 egg
- 1 3/4 cup flour
- 1 1/2 tsp ground ginger
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup rock sugar for rolling, can be substituted fro white sugar
In large bowl, whisk together sugar, oil, molasses and egg until smooth.
In separate bowl, sift the flour, ginger, cinnamon, baking powder, baking soda and salt. Stir into sugar mixture until a dough is formed. Chill the dough for 30 minutes or freeze the dough at this stage.
Preheat the oven to 375°F.
Shape 1 Tbsp sized balls and roll in rock sugar to coat. Place 2 inches apart on parchment paper–lined or greased rimless baking sheets.
Bake for about 10-12 minutes until the edges are very lightly browned. Cool for 10 minutes before transferring cookies onto a cooling rack.
Once baked, these cookies also freeze very well if tightly sealed between layers of parchment.
