Everyone has a ‘Go To’ cookie. For some, it’s chocolate chip and for others maybe peanut butter? Either way, they are wrapped up in nostalgia and 100% tasty! Just like these ones!
I came up with the recipe almost by accident when trying to clear out my baking pantry. These babies have a little bit of everything…which is consistent with my ‘I want it all’ personality (or indecisiveness?). What ever – they are good!
Espresso Choco-Nut Oatmeal Cookies
- 3/4 cup butter, room temperature
- 1 cup brown sugar
- 1/4 tsp salt
- 1 egg
- 1 1/2 tsp vanilla
- 1 shot of espresso, about 1 1/2 Tbsp
- 1/2 cup flour
- 1/2 cup whole wheat flour
- 2 Tbsp wheat germ
- 3/4 tsp baking soda
- 2 1/4 cups rolled oats
- 1 1/2 cup chocolate chips or chunks
- 1 cup coarsely chopped nuts, hazelnuts or walnuts are my fave!
Preheat oven to 350°F.
In a bowl, mix the brown sugar into the sugar until pale. Add the salt, egg, vanilla and espresso and combine.
Add the flours, wheat germ and baking soda and mix through gently.
Stir in the oats, chocolate and nuts. Chill the dough for 30 minutes or freeze the dough for a later use.
Drop by tablespoon fulls onto a parchment lined baking tray and bake for 7-10 minutes until centers are just set and edges are lightly browned.
