This cake is reminiscent of a sticky toffee pudding but with a hint of maple flavor and roasted pears.

Upside Down Pear Cake with Bourbon Toffee Sauce

Pear Cake

  • 1/4 cup butter
  • 1/4 cup brown sugar
  • 4 bosc pears, peeled, halved and cored
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup maple syrup
  • 1/2 cup water

Preheat your oven to 350F.

Melt the butter in a 10-inch cast iron pan and stir in the sugar. Add the pears and coat in sugar. Turn the pears cut-side down on the pan and place into the oven for 20 minutes.

In the meantime, prepare the batter. Sif the dry ingredients together and set aside.

Beat the butter until light and fluffy. Add the sugar and beat through. Beat in the eggs one at a time along with the vanilla. Fold in the maple syrup followed by half the flour mixture. Stir in the water followed by the remaining flour. Mix until a uniform batter is formed. Gently pour the batter over the pears and bake for 35 minutes or until an inserted toothpick comes out clean.

Place the cast iron pan over a sheet pan in case there is any spillage!

Cool for 10 minutes before turning onto a cake plate.

Bourbon Toffee Sauce

  • 1/4 cup butter
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 egg yolk
  • Pinch of salt
  • 1 Tbsp water
  • 3-4 Tbsp Bourbon, more if desired

In a small saucepan, gently melt the butter over medium low heat. Add the sugar and stir until completely dissolved and begins to boil, about 6-8 minutes. Add the water and salt and continue mixing until the mixture has thickened.

Remove from heat and stir in the Bourbon.

Sauce can be made ahead and gently reheated in the microwave or over the stove.
