We grew brussel sprouts in the garden last year with absolutely no success. Lots of large cabbage looking leaves, healthy stalks but no sprouts! Not a single one. I saved this recipe until the very end of season hoping to find a couple small sprouts in the garden but no dice. Store bought sprouts are just going to have to do!
I love how simple this salad is. An otherwise boring salad gets a boost from perfectly toasted almonds and pickled onions. The salad also benefits from a bit of time. Dress the salad 30 minutes in advance to let the flavors marry.
Vegan Shaved Brussel Sprout Salad
- 1 1/2 lbs brussel sprouts, between 20-24, shaved with a mandolin
- 3 Tbsp diced pickled onions
- 1/3 cup chopped toasted almonds
- 4 Tbsp olive oil
- 2 Tbsp white balsamic vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
Toss the first 3 ingredients in a bowl until mixed. Place the last 4 ingredients into a jar and give it a vigorous shake. Pour the dressing over the salad and toss. Allow the salad to marinate for 20 minutes before serving.
