Just like my chocolate bars, I like eating my brownies and blondies straight out of the freezer. I haven’t a clue why and I’m not sure when or where I started with this bizarre habit but it’s just a ‘thing’ – seriously, give it a try.
Frozen or fresh out of the oven, these blondies are crowd pleaser and chock full of all the rich ooey gooey stuff we loe.
White Chocolate Skor Blondies
- 1 cup butter
- 1 1/2 cups brown sugar
- 2 eggs
- 1 Tbsp vanilla extract
- 3/4 tsp kosher salt
- 2 cups flour
- 1 tsp baking powder
- 1 cup white chocolate chips
- 1/2 cup Skor toffee bits
- 1/2 cup chocolate chips
- 200 g chopped walnuts, optional
- Maldon sea salt for sprinkling, optional
Grease and line a 9×13 inch baking pan with parchment paper. Preheat the oven to 350°F.
Cream the butter and sugar together until very fluffy – about 3 minutes. Incorporate the eggs one at a time followed by the vanilla and salt.
Sift the baking powder together with the flour right into the butter mixture. Stir until just incorporated. By hand, mix in the nuts, chocolate chips and the Skor pieces and transfer the batter into the prepared pan. Level out the batter, sprinkle with Maldon salt and bake for 22-25 minutes until the lightly puffed but the center is just set.
Cool completely before cutting or place into the freezer for 20 minutes to firm up the blondie – this will help with the slicing.
